Kalakand is so loved by everyone as this dessert is not over sweet unlike other Indian sweets. This is perfect for any festive occasion and is so quick to make that your guest will be surprised if you say you made these at home that too within minutes.

Preparation:
In a microwave safe dish, grease it with ghee. Mix the Ricotta Cheese, saffron and the condensed milk well.
Mash down all the lumps with a help of a whisk.
Cook in the microwave for 10 minutes uncovered by stirring them occasionally in between 2 mins.
Add in the powdered cardamom and rose essence and mix well again. Sprinkle chopped pistachios in a rectangular greased tray press down and flatten the mixture on top.
Cover and allow to set either in the refrigerator for an hour or on the counter-top for a few hours.
Cut into desired shape and serve.

- Saffron Strands - Few
- Rose Essence - Few drops(optional)
