Spinach is used world wide. There are many varieties of spinach. I used Malabar spinach, which is a climber, both in pink and green colour. Spinach is said to contain more antioxidants. It is a good source of vitamin A, folate and calcium. Spinach is used in making curries, gravies and so on. Making spinach fritters will be easy to prepare as a teatime snack. The ingredients needed to make this are very simple and easily available in every home. In this recipe, I used wheat flour to make it more healthy.

Preparation:
Wash and tap dry the spinach leaves. In a bowl, add wheat flour, chilli powder and salt together.
Add the required water to make a batter of bajji consistency.
Heat oil in a kadai and reduce the flame to medium. Dip each spinach leave in the batter and drop into the hot oil.
Fry till golden brown.
Crispy Spinach Fritters is ready to serve.
Serving Options:
Serve with tomato sauce or any chutney of your choice. We usually have spinach fritters with mint chutney.

- Salt - As per taste
- Chilli powder - Half teaspoon
- Oil - For frying
- Water - As required
