This is a dish I usually prepare when I am out of vegetables at home. It's simple and can be prepared in few minutes.
Ingredients:
Onions - 4 (Chopped vertically into long pieces)
Garlic Paste - 1 tablespoon
Coriander Powder - 1 tablespoon
Garam Masala Powder - 1 tablespoon
Ginger - 1 tablespoon(finely chopped into small pieces)
Green Chillies - 6(cut into two halves vertically)
Turmeric powder/haldi - 1 tablespoon
Salt - According to taste
Tomatoes - 1
Coriander Leaves - To garnish
Oil- 3 tablespoons
Preparation:
Take a pan and pour oil into it. Add ginger, onions and green chillies. Fry till the onions turn light brown in colour.
Add garlic paste, corainder powder, turmeric powder, garam-masala powder and salt.
Mix well and leave on low flame for 5 mins.
Take the tomato and cut into two halves vertically which will give you two slices of the tomato.
Add the tomato slices in the pan and cover with a lid and allow it to cook for 5 mins on medium flame so that the slices turn soft.
Addition of tomato is optional. I add it to give the dish a good flavour.
Remove the lid and mix well. Garnish with corainder leaves and the dish is ready to be served.
Serving Options:
This can be served as a side dish with idli/dosa. It can also be served along with rice/roti.
