Once in a while I feel I should eat spinach as it is considered as healthy food. A few additions to spinach makes this spinach and tomato curry which I hope you will like.
Ingredients:
Spinach - 2 bunches
Tomatoes - 1
Onions - 1(Finely chopped)
Green Chillies - 4(Finely chopped)
Red Chilli Powder - 1 tablespoon
Mustard Seeds/Rai - Half table spoon
Urad Dal - 1 table spoon
Cumin Seeds – Half table spoon
Turmeric Powder - Half tablespoon
Salt - To taste
Preparation:
Take a pan to heat and add oil to it.
Add mustard seeds, urad dal and cumin seeds and wait till they pop.
Add onions along with green chillies and fry for 5 mins.
Add finely cut spinach and cover with a lid and cook for 15 mins.
You can find that the spinach has turned soft which means it is cooked.
Add turmeric powder and salt as per your taste.
Add tomatoes and cover with a lid and cook for another 15 mins.
Open the lid and mix well. Add red chilli powder.
Cook for another 10 mins without the lid and remove the pan from heat.
The spinach and tomato curry is ready to be served.
Serving Options:
This tastes best as a side dish for rotis/chapatis/naans.
