Bored from eating the routine stuff I tried to mix yellow cucumber and potato and tried out this dish. It's got a really good taste and it turned out to be one of my favourites. Do try out.
Ingredients:
Potatoes - 3(Finely chopped)
Yellow Cucumber - 1(Finely chopped)
Tomatoes - 1(Finely chopped)
Onions - 1(Finely chopped)
Green Chillies - 4(Finely chopped)
Mustard Seeds - 1 tablespoon
Cumin Seeds - 1 tablespoon
Urad dal - 1 tablespoon
Chana dal - 1 tablespoon
Turmeric Powder - 1 tablespoon
Curry Leaves - 5
Salt - As per taste
Red Chilli Powder - 1 tablespoon/As per taste
Oil - 2 tablespoons
Preparation:
Take a pan to heat and add mustard seeds, cumin seeds, chana dal and urad dal.
Wait till they pop and add curry leaves, green chillies and onions.
Fry till the onions turn light brown in colour. Then add the potatoes, turmeric powder and salt. Cook for 15 mins by covering with a lid.
The potatoes will turn slightly soft by this time. Then add the yellow cucumber along with tomatoes and cook for another 15 mins by covering with a lid.
Remove the lid and add red chilli powder and mix well. Cook for another 10 mins. Remove from heat and serve hot.
Serving Options:
Serve it with steamed rice or rotis.
