Whenever I look for a fry recipe and have enough time to prepare, the recipe I make is grated carrot stir fry. This is colorful and very healthy too. The look itself is mouth-watering and of course the taste is even better. Try out by your own self and enjoy the grated carrot stir fry.
Ingredients:
Grated Carrot - 300 grams
Onions - 1(Finely chopped)
Green Chillies - 4(Finely chopped)
Mustard Seeds - 1 tablespoon
Cumin Seeds - 1 tablespoon
Urad dal - 1 tablespoon
Chana dal - 1 tablespoon
Turmeric Powder - 1 tablespoon
Curry Leaves - 5
Salt - As per taste
Red Chilli Powder - 1 tablespoon/As per taste
Garam Masala Powder - Half tablespoon
Oil - 2 tablespoons
Coriander Leaves - Half bunch
Preparation:
Take a pan to heat and add oil to it. Once heated add mustard seeds, urad dal, cumin seeds and chana dal.
Once they pop, add onions, curry leaves, turmeric powder and green chillies and fry for 5 mins.
Add the grated carrot along with salt and mix well. Cover it with a lid and cook for 15 mins.
Remove the lid and check if the carrot is cooked or not. Sometimes the carrot may take a longer time to get cooked. If not cooked continue till the carrot gets a wrinkled look.
Then add red chilli powder along with garam masala and cook on low flame for another 10 mins.
Add corainder leaves and mix. Remove the fry from pan and serve hot.
Serving Options:
Serve it with roti/chapati or as a side dish with sambar/rasam rice.

this looks good lavanaya. i have not tried with grated carrots. one of my earlier dishes had carrot and green chilli stirred but i made carrots soften using very little water. check that out when u get time but i think i wud try out ur version as it wud make another alternative
