Pesto has been one of my favorites ever since I have stayed in US. Be it in pizza topping or be it in any dish, I always look for pesto. Reason being the wonderful flavor it gives to the food. One day, I thought I should try out my own recipe using pesto and chicken, outcome of which is this recipe Pesto Chicken. This has a wonderful taste as pesto consists of crushed garlic, basil, pine nuts with olive oil, Parmesan cheese and also cheese made from sheep's milk. All these add a great flavor to this dish. Ingredients:
Chicken Pieces - 500 grams(Cubed and boneless)
Pesto Basil Paste - 4 tablespoons
Turmeric Powder - Half tablespoon
Salt - As per taste
Red Chilli Powder - 1 tablespoon
Garam-masala powder - Half tablespoon
Coriander Powder - Half tablespoon
Oil - 2 tablespoons
Onions - 1(Finely chopped)
Green Chillies - 4(Finely chopped)
Chicken Masala Powder - 1 tablespoon(Made from grinding cloves, cinnamon, bayleaf and turmeric powder)
Coriander Leaves - Half bunch
Preparation:
Take a bowl and add pesto basil paste.
Take another bowl and add cubed chicken pieces and marinate it by adding turmeric powder, salt, red chilli powder, pesto basil paste, garam-masala powder and coriander powder. Keep this aside for 2 hours. You can add green chillies paste instead of red chilli powder. Its upto you.
Once the chicken pieces are marinated well, take a pan to heat and add oil to it. Add onions, green chillies and chicken masala powder.
Once the onions are fried, add the chicken pieces and mix well.
Allow it to cook for 20 minutes till the chicken pieces are cooked well. Once its cooked, add the chopped corainder leaves and mix. The pesto chicken is now ready to be served.
Serving Options:
Serve this as a starter or you can serve it along with sambar rice/rasam rice as a side dish or can be used as a filling in dosa.
