Mixed Vegetable Khichdi is the healthiest as well as comfort food for everyone. It is healthy because we use all the vegetables which provide sufficient proteins to our body. This is good even for kids. The choice of the vegetables is completely upto us. Here I have used beans, carrot and potato but you can use any other if you don't prefer these vegetables. Have a look!
Ingredients:
Moon Dal - 1 cup
Rice - 2 cups
Water - 4 cups
Onions - 1(finely chopped)
Carrot - 1(finely chopped)
Beans - 50 grams(finely chopped)
Potato - 1(medium, peeled and cut)
Green Chillies - 4(finely chopped)
Curry leaves - 5
Mint leaves - 15
Ginger-garlic paste - 1 tablespoon
Salt - According to taste
Oil - 2 tablespoons
Preparation:
Wash the moong dal and rice and keep it aside.
Take a cooker and pour oil into it. Add onions and fry on medium flame for 5 mins.
Add beans, carrot, potato and green chillies. Also add salt and ginger garlic paste and mix.
Add moong dal and cook for 5 mins.
Then add rice and mix so that all the ingredients combine properly.
Cook for 5 mins and add 4 cups of water. Add mint leaves and cook for 3 whistles.
Remove the cooker from heat and serve hot.
Serving Options:
The real flavour of khichdi always shows up with achaar/pickle. So serve with any pickle of your choice.
