Hyderabad, the city of Nizam's is very famous for its wonderful cuisine. One among them is the Hyderabadi Bagara Baingan. This is prepared by cutting the brinjal and stuffing it with masala. It has a great flavor and this is because of its ingredients. Like any other hyderabadi recipe, once you get a taste of it, you will ask for more.
Ingredients:
Preparation:
Fry the sesame for a minute on heat and remove it. Fry the onions by adding a teaspoon of oil till they turn light brown in color.
Take a blender and add sesame and fried peanuts and blend them. Then add onions, ginger-garlic paste, dhaniya powder, salt, red chilli powder, garam masala powder, water and blend all these into a fine paste.
Cut the brinjal into 2 slits till half and stuff the masala paste in it as shown below.
Take a pan to heat and add oil to it. Add the stuffed brinjal pieces in it and cook till they turn soft. Remove the brinjal pieces and keep them aside.
In the same pan add the masala paste which we have prepared and cook for 10 mins.
Then add the tamarind juice along with the brinjal pieces. Cook them by covering the pan with a lid for 10-15 minutes till the curry comes close.
Once cooked, remove from heat and the Bagara Baingan is now ready to be served.
Serving Options:
Serve the delicious Hyderabadi Bagara Baingan with vegetable biryani/vegetable pulao.

- Dhaniya powder - 3 teaspoons
- Sesame - 25 grams
- Garam masala powder - 3 tablespoons
- Salt - As per taste
- Ginger-garlic paste - 2 teaspoons
- Tamarind juice - 1 cup
- Oil - 5 tablespoons
- Red chilli powder - 4 tablespoons
- Water - Half cup
