Groundnuts are one of the ancient crop still in use. These are a good source of niacin, folate, fiber, magnesium, vitamin E, manganese and phosphorous. Groundnut can be used in any form as a whole or grounded. This rice preparation is simple and easy to make. This rice will be a perfect lunch box recipe.

Dry roast the groundnuts and crush coarsely. Heat oil, add the mustard seeds and wait till it splutters.
Add the chopped onion and sauté well till translucent.
Add the curry leaves and cooked rice, saute for five minutes. Add the required salt and mix well.
Add the chilli powder and groundnut powder and mix well. Cook in low flame for five minutes. Stir well. Ground nut rice is ready to be served.
