This recipe of Mixed Vegetable Biryani is the one which my mom makes. She uses many vegetables and mild masala yet it will be very tasty. She will make this briyani atleast twice in a month. It is an easy to make and healthy briyani.


Ingredients:
  • Rice - 500 grams
  • Onion - 1
  • Carrots - 100 grams
  • Potatoes - 100 grams
  • Beans - 100 grams
  • Turnip - 100 grams
  • Chow chow - 100 grams
  • Green peas - 100 grams
  • Mint leaves - Few
  • Coriander leaves - Few
  • For Grinding:
  • Cinnamon – 1 inch piece
  • Cloves – 2
  • Cardamom – 1
  • Ginger – 2 inch piece
  • Garlic – 6 cloves
  • Red chillies – 10
  • Tomatoes – 4
  • For Tempering:
  • Butter / Oil – 1 tablespoon
  • Bay leaf – 1

Preparation:

Wash and chop the vegetables to the desired shape. Wash and soak the rice for fifteen minutes. Heat a pressure cooker and add butter and let it melt. Add the bay leaf and chopped onion. Saute well.


When the onions become translucent add the grounded masala and saute well.


Cook the masala till the raw smell leaves. At this time oil will ooze out of the masala. Add the chopped vegetables and saute well.


Add the mint and coriander leaves. Mix well.


Drain the water from the rice and add the rice to the vegetable mixture. Mix well.


Add the required salt and five cups of water. Mix well.Close the lid and cook for two whistles.


When the pressure subsides, open the lid and mix well. Mixed vegetable briyani is ready to serve.


Serving Options:

Serve the delicious mixed vegetable biryani with any raita of your choice.
