After googling for the benefits of groundnuts, I have found that groudnuts consumed along with jaggery are very beneficial to health. They are a high source of energy and protein. Groundnuts combined with jaggery makes Peanut Laddu. This is yet another very easy but tasty and healthy recipe. It requires only 3 ingredients and as jaggery is used as the sweetener, we can consume it without any guilt.
Ingredients:
Preparation:
Roast the peanuts until black spots appear and break them into halves.
Add grated jaggery and water to a nonstick pan and keep stirring.
Once the syrup starts boiling, add cardamom powder to it. The kitchen will smell divine at this time.
Check for the consistency of the syrup. When you drop the syrup in water, it should not dissolve and you should be able to make a hard ball out of the syrup. Now add the groundnut pieces and immediately switch off the stove..
Grease your hands with ghee and make into balls immediately. Delicious peanut laddu's are ready to be served. They stay good for almost a week, but I am sure they will be over in less than 2 days as they are too yummy.
