The fall is here and I am loving this time of the year. The changing trees, falling leaves, dreamy weather and the approaching holiday season - all of this makes me appreciate everything around much more. The chill has started and I prefer curling up in the comforter to stay warm. No wonder I feel lazy to cook. For the same reason, I make sure to have Bush's Beans stocked up in my pantry always. They offer so many varieties of beans which are healthy and can be used in making mouthwatering easy recipes. My latest creation using Bush's Beans was Chicken Black Bean Tacos which turned out to be a great hit. We are black bean lovers and so I picked up Bush's Seasoned Recipe Black Beans to create this simple yet flavorful recipe. So here is what goes into its making.

Preparation:
First, let us prepare the salsa for the tacos. Take chopped tomatoes and onions in a food processor and pulse a few times to dice all the ingredients and mix them together. Add in olive oil, coriander leaves, salt, and cumin powder as per your taste. Set it aside for 1 hour so that the flavors combine.
Take a pan and heat the oil. Add onions and tomatoes, cook for 3-5 minutes. Now add the Bush's Black Beans and cover the pan to cook for 5 minutes. Once done, keep it aside.
Take the chicken pieces and pressure cook till the chicken is well cooked. When done, carefully remove the lid of the slow cooker. Using two forks, pull the meat apart into shredded pieces and mix with the bean mixture.
Now you have all the main ingredients to fill the tortillas. So it's time to heat the tortillas. Place each tortilla on a microwave-safe plate and cover with a damp paper towel. Microwave for 30 seconds just enough to make it warm.
Now fill the tortillas with the chicken black bean mixture you made. Add your favorite toppings. I added avocado slices, salsa, mayonnaise, lime juice, shredded broccoli, shredded cabbage, shredded carrot and shredded cheese.
The yummy Chicken Black Bean Tacos are now ready to be served. Enjoy them!
