Last weekend I asked my husband what he wants for dinner and I got an instant reply that he would love to eat Tandoori Chicken Pizza. I was surprised by his answer because he chose an Indian twist to the regular pizza we make at home. But now that he asked, I really wanted to give it a try. Tandoori chicken is a popular dish in India which is loved by one and all. It is prepared by roasting chicken marinated in delicious spices in a tandoor, a cylindrical clay oven. Since I had limited time in hand, I decided to come up with a slightly tweaked version of Tandoori Chicken Pizza. Check out the recipe here!

Preparation:
Prepare the marinade for tandoori with oil, salt, red chili powder, pepper, ginger-garlic paste, yogurt, turmeric powder, lime juice, red food color and garam masala powder. Take half of the marinade mix and keep it aside. Apply the remaining half mix to the chicken on both sides and marinate it for at least 5 hours in the refrigerator.
Prepare the tandoori chicken by preheating your grill to medium-high. Grill the chicken on each side till its well cooked (it takes 15-20 minutes). Remove from the grill, allow the chicken to cool and cut it into small pieces.
Now preheat the oven to 450 degrees F. Take a pre-baked pizza crust of and spread oil over the crust. Add the pizza sauce along with the remaining tandoori sauce.
Add the toppings which you have such as red onions, bell peppers, sweet corn, tandoori chicken. Sprinkle mozzarella cheese on it generously, and top it up with cilantro.
Preheat grill to 450° F. and place the pizza inside till the cheese melts and edges turn brown. The delicious grilled tandoori chicken pizza is now ready to be served.
Pairing Grilled Tandoori Chicken Pizza with CK Mondavi and Family Merlot:
Keeping the tradition of weekend wine pairing intact, I served the Grilled Tandoori Chicken Pizza with CK Mondavi and Family Merlot. Merlot is medium-bodied with a hint of oak and flavors of cherries and plums. It is rich in the mouth and ends in a soft fruit-filled finish. It is perfect to pair with fish, poultry, bread, soft cheese and rich seafood.
I received three different wines from CK Mondavi and Family - Pinot Grigio, Merlot and Cabernet Sauvignon. Since I already paired Cabernet Sauvignon earlier, I went with Merlot this time. The pairing was as good as it can get. It was the perfect wine I could ask for to pair with Tandoori Chicken Pizza.
